You have to to alter them from the NPC Options part. Traits are items of details about an NPC that is not lined by the NPC options part. These are entered immediately onto the NPC's stat block. When you click the "&" button that appears proper below the "Senses/Languages/Challenge Rating" part it is going to add a blank entry where you may add a single trait for that NPC.
